Corn Casserole
1 can whole kernel corn
1 can cream style corn
2 eggs
1 stick melted margerine
1 8 oz. carton sour cream
1 box Jiffy corn muffin mix
2 Tbsp. sugar (optional)
Combine all ingredients and bake at 350 degrees for 45 min. to 1 hr.
(Some versions call for sprinkling the top with grated cheese. I don't
think it would be good even though I like cheese.)
I use a 9" x 13" glass dish. If you use a deep casserole dish, it will
take longer. You can check for doneness with a toothpick. It should be
puffed up and lightly brown on top.
